My Mother-in-Law’s Crispy Garlic-Beer Chicken Thighs

There’s something about this chicken that feels like home, even though it’s not from mine. My mother-in-law makes it in the most effortless way, never measuring a thing, just a few generous scoops of mayo, a squeeze of mustard, and whatever seasonings she feels like that day. It always comes out perfect — tender, juicy, packed with flavor, kissed with that golden, crispy skin.

When I make it, I add a few splashes of beer just like she does — it keeps the chicken juicy and gives it this deep, cozy flavor that fills the whole kitchen. It’s not fancy or complicated — just real food, made with love.


Ingredients

  • 6 – 8 bone-in, skin-on chicken thighs

  • ½ cup mayonnaise

  • ⅓ cup mustard (any kind — Dijon, yellow, or grainy all work)

  • 6 – 8 garlic cloves, minced or crushed

  • A few splashes of beer (just enough to loosen the mixture)

  • Salt and black pepper, to taste

  • 1 tsp paprika

  • ½ tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp chipotle powder

  • ½ tsp onion powder

  • ½ tsp garlic powder

  • ½ tsp coriander

  • ½ tsp all-purpose seasoning (or whatever you have on hand — the more the merrier!)

Instructions

  • Preheat oven to 400°F (200°C).

  • Pat dry the chicken thighs and place them in a large bowl.

  • To that bowl, add mayonnaise, mustard, garlic, beer, and all seasonings. I measure with my heart here, season generously. The more, the better. The chicken will soak it all up and have the most incredible flavor — you really can’t mess it up here. If you don’t have all the seasonings listed, that’s totally fine! Whatever you have works!

  • Mix and coat the chicken evenly in the mixture, making sure to get under the skin for extra flavor.

  • Arrange the thighs on a baking sheet lined with parchment paper, or casserole dish.

  • Bake for 40–45 minutes, or until the skin is golden, crisp, and the juices run clear.

  • Spoon any leftover pan juices over the top before serving and enjoy with rice, pasta, or salad!
